


Orange & Ginger Scones

Yield: 1 dozen
2 cups all-purpose flour
4 tbsp. sugar
2 tsp. baking powder
2 tsp. ground ginger
½ tsp. salt
¼ tsp. baking soda
½ cup (1 stick) cold butter
1 large egg
¾ cup sour cream
1½ tsp. grated orange peel
Preheat oven to 400°F.
In a bowl, combine the flour, sugar, baking powder, ginger, salt and baking soda. Cut in the butter until the mixture resembles coarse crumbs. Combine the egg, sour cream and the orange peel; add to the crumb mixture and stir until a soft dough forms.
Turn onto a floured surface; knead 5 or 6 times. Divide the dough in half. Pat each portion into a 7-in. circle. Cut each circle into 6 wedges. Separate wedges and place at least 1-inch apart on an ungreased baking sheet.
Bake for 10-12 minutes or until lightly browned.
