This recipe is so versatile you could substitute the ground beef with chicken, pork or shrimp. You can even make it without the meat for a total vegetarian/ meatless Monday option! I like to serve it with some potstickers or egg rolls but really, it's just plain good on it's own! And the leftovers? Oh so good the next day!
Easy Beef Lo Mein
Ingredients (Serves 6-8):
- 1 pound of ground beef, cooked and drained
- 8 ounces spaghetti noodles, cooked
- 2 carrots, peeled and cut into matchsticks
- 1 medium onion, thinly sliced
- ½ head of cabbage, sliced thin
- 2 tbsp vegetable oil
- 6 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp sesame oil
Instructions:
Brown the ground beef and drain off fat.
Boil spaghetti noodles until just al dente, drain.
While noodles are cooking, saute vegetables in the oil until tender. Add the noodles, along with the ground beef.
In a small bowl, whisk together soy sauce, sugar and sesame oil and pour over the noodle mixture. Use tongs to mix well to thoroughly coat the noodles and continue to cook until heated through and noodles are done, 5-10 minutes.
Serve with egg rolls or potstickers (and don't forget a fortune cookie!).
Yes - quick and easy - that's my style. This recipe looks like a really good one! Thanks for sharing!
ReplyDeleteYummy. Both my Grands love Lo Mein!
ReplyDeleteAhhh. Great idea to use the ground meat also since it cooks muuuch faster.
