Easy Tuna Casserole

Tuna, egg noodles, milk, flour, cheese and a secret ingredient are all you need to make this easy family favorite tuna casserole. It's great as leftovers, too!

During the winter months, besides crockpot meals, I like to make up casseroles. I find them to be one of the best comfort foods and one of my all-time favorites is this easy old fashioned, cheesy tuna casserole that I have been making since my sons were little (so, that is a looong time!).

In fact, when we visited with my youngest son and his family last year, I asked him what his favorite meal was growing up and this tuna casserole was it!  I asked what it was that he liked the most about it and he said the fact that it was cheesy and how the egg noodles poking out on top got really crispy from baking.

I have to admit, that is one of the things I like most about this dish too!  Well that and it is so easy to put together.  Add a salad or a vegetable and this will be a meal your family will remember over the years too!


Tuna Noodle Casserole Recipe


Ingredients (Serves 4-6)
  • 10 ounces egg noodles
  • 2- 5 ounce cans Tuna pack in water (drained)
  • 8 ounces sharp cheddar cheese, shredded
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 2 teaspoons Worcestershire sauce
  • Salt & pepper to taste
Instructions
Spray a 2-quart casserole dish with cooking spray. Preheat oven to 400°F.
Cook noodles in a large pot of boiling salted water until al dente, drain.
In saucepan, melt butter over medium heat, whisk in flour and continue to whisk for 2-3 minutes.
Slowly add milk to roux while whisking, and bring to a gentle boil, allowing the sauce to thicken.
Turn off heat and add shredded cheese a handful at a time, whisking each addition until smooth.
Stir in the Worcestershire sauce and drained tuna and add salt & pepper to taste.
Add egg noodles and transfer to prepared casserole dish.
Bake until topping is crisp and sauce is bubbling, 25 to 35 minutes.

Valentine's Day China Cabinet

It's been a bit since I've changed out the decor in my china cabinet and with Valentine's Day fast approaching, I decided now was the time!

After going through the bin dedicated to this special day of love I decided to stick with the traditional colors of red, pink & white.

Starting at the top, I shopped the house some and placed a thrift store mirror in the center. I pulled some faux pink and white lilies from my stash and laid them at the corner of the mirror to soften.

while a white urn with a rose heart anchors the other side.

Next, I taped some pink scrapbook paper in the back of the shelves. White lace chargers were placed in the back of the top shelf. I added some heart shaped plates from Hobby Lobby in front of them. A red vase, once filled with flowers from Mr. B and a Be Mine plaque filled it in perfectly. 
The lower shelf has a pair of my favorite vintage white Johnson Bros dinner plates and pink rose heat salad plates from Home Goods.  The red straw heart is from IKEA from a few years ago.

For the bottom shelf I placed some red chargers from Kirkland's in the back and added a couple more Johnson Bros plates.

I filled a pair of heart shaped vases with red heart shaped beads and placed a heavenly cherub next to each one.

The angels seem to be entranced by the lyre playing of the larger cherub nestled in more beads in a replica Candlewick candy dish that was a house warming gift from my dear blogging friend Barbara.

Even though Valentine's Day is still a few weeks away, each time I walk passed this cabinet, I am reminded of how lucky I am of my last love, Mr. B!

Easy Beef Lo Mein

Easy Beef Lo Mein!  A simple one pot wonder you can make at home!
I love quick & easy recipes that use simple ingredients that I can throw together fast and yet tastes like something we would order when out. This easy beef lo mein fits all of that! Added bonus?  It uses ingredients I usually always have on hand! About the only thing you might need to purchase is the sesame oil but, that can easily be found in the Asian food aisle at your local store.  You don't use a lot of it so be sure to store in the fridge so it doesn't go bad.  I've had my bottle for years!

This recipe is so versatile you could substitute the ground beef with chicken, pork or shrimp. You can even make it without the meat for a total vegetarian/ meatless Monday option!  I like to serve it with some potstickers or egg rolls but really, it's just plain good on it's own! And the leftovers?  Oh so good the next day!

Easy Beef Lo Mein.  A simple take out favorite recipe you can make at home!

Ingredients (Serves 6-8):

  • 1 pound of ground beef, cooked and drained
  • 8 ounces spaghetti noodles, cooked
  • 2 carrots, peeled and cut into matchsticks
  • 1 medium onion, thinly sliced
  • ½ head of cabbage, sliced thin
  • 2 tbsp vegetable oil
  • 6 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp sesame oil
Instructions:

Brown the ground beef and drain off fat.
Boil spaghetti noodles until just al dente, drain.
While noodles are cooking, saute vegetables in the oil until tender. Add the noodles, along with the ground beef.
In a small bowl, whisk together soy sauce, sugar and sesame oil and pour over the noodle mixture. Use tongs to mix well to thoroughly coat the noodles and continue to cook until heated through and noodles are done, 5-10 minutes.
Serve with egg rolls or potstickers (and don't forget a fortune cookie!).

Winter Mantel Decor

I have been so removed from blogging that I never even shared our Christmas mantel. Well I intend to get back into it and I'll start by sharing how I decorated our mantel for the winter months.

I decided to go with a crisp red & gold theme instead of the traditional whites etc. Most of the items I used were things I already had and a few are new from a recent Hobby Lobby shopping trip.

I found this gold frame and the spiked piece on sale. I then put them together by removing the glass from the frame and hot gluing the spiked piece on a sheet of white paper, cut to fit the frame. I love the dimensional look it created.

The red vase on the black stand I have had for years as well as the gold metal piece behind the frame.

This red decorative plate was a gift from Pier 1 years ago and I had purchased the gold decor piece from Hobby Lobby a long time ago too.

The wooden bowl is my favorite find. Found on clearance, it adds a natural element to the vignette.

The inside of the bowl has a scraped finish.  I can see using this in other vignettes and tablescapes throughout the year.

I will be changing it out soon as we get closer to Valentines Day but, we are enjoying how warm, bright and cheery the mantel looks now, during the cold and gray still to come this winter.

You're Gonna Love It~Party Time!

Welcome back!  Wow!  I had forgotten how much things slow down after the holidays are over!  I have just been in a fog the past week!  I wonder if there is such a thing as a Holiday Hangover, because that is what it feels like!  I am so ready for some blue skies and sunshine to clear this fog from my brain!  Maybe come March??  How about you, are you lagging too or are you being all creative?  If it's the latter, well then, let's get this party started so you can show us what you have been up to!
